1 | large pinch coarsely grated Parmesan cheese |
1. Spread the pesto on the slice of bread and top it with the Parmesan cheese. Pop the toast into the toaster oven or the real oven turned to 400ºF and toasted until the cheese is melted and lightly browned.
2. Meanwhile, poach the eggs in boiling water as you prefer to do it. I just carefully crack the egg into the boiling water and allow it to boil for about four minutes, or until the white is no longer transparent.
3. Slide the poached egg onto the pesto cheese toast and serve!
A fried egg or scrambled egg would work just as well served on top of this cheese toast. Drizzle it with some high quality olive oil or white truffle oil and a crank of black pepper for stronger taste. This meal also serves as an excellent power breakfast or dinner when there is no time to naptime chef.
