1 | lemon, juiced |
½ | cup olive oil |
1 | pinch salt |
4 | large mint leaves, finely chopped |
1 | garlic clove, smashed |
16 | ounces cod fillet (or similar white fish), figure about 8 ounces per person |
1. Whip the lemon juice and olive oil together in a small bowl until smooth and satiny. This will take a minute or two. Add a pinch of salt, the smashed garlic clove and the mint.Set aside.
2. Sprinkle both sides of the fish with a little bit of salt and pepper. Place a sheet of aluminum foil on the grill and allow it to warm up for a minute. Grill the fish for about two minutes per side or until just cooked through. Remove the fish to plate and drizzle with the fish with the oil, discarding the garlic clove before doing so. Enjoy!
This light meal is ideally served with fresh vegetables, grains like couscous or rice or an easy caprese salad.
10 minutes prep time, 15 minutes cook time.
This is a delicious, easy meal that we all loved. Our daughter even tried some, her first fish dish she actually liked!
