adapted from the Quaker Oats Box
makes about 3 dozen small drop cookies
1 | stick plus 6 tablespoons butter, softened |
¾ | cup firmly packed light brown sugar |
½ | cup granulated sugar |
2 | large eggs |
2 | teaspoons vanilla extract |
1 ½ | cups all-purpose flour |
1 | teaspoon baking soda |
2 | teaspoons kosher salt |
3 | cups quick-cooking oats |
1 | cup chocolate covered Heath Bar bits |
1. Preheat the oven to 350 degrees F. Mix the flour, baking soda, and 1 teaspoon of the salt in a small bowl and set aside.
2. In an electric mixer beat the butter and sugars on medium speed until light and fluffy. With the mixer on low add the eggs one at a time, beating well after each addition. Then add the vanilla and mix well.
3. With the mixer on low slowly add in the flour mixture until just combined. Then stir in the Heath Bar bits.
4. Line two baking sheets with parchment paper and drop the dough by the rounded tablespoonful about 2 inches apart onto each sheet. Once the entire sheet is filled sprinkle a little pinch of kosher salt over all the cookies.
5. Bake for about 8 to 10 minutes, or until the cookies are lightly browned and set in the middle. Cool on the cookie sheet for five minutes, then remove to wire racks to cool completely.
This delicious cookies will accompany just about anything perfectly!
