1 | baguette |
½ | cup cherry tomatoes, halved |
½ | pound fresh mozzarella, sliced thin |
2 or 3 | fresh basil leaves, torn |
2 | tablespoons balsamic vinegar |
¼ | cup olive oil |
1 | pinch sea salt |
1. Place the sliced tomatoes in a bowl with the balsamic vinegar, olive oil and salt. Toss well. Let this mixture rest for at least 10 minutes.
2. Cut the baguette in half and place layer the mozzarella in one layer. Then scatter the basil leaves on top. Finally, top the basil with the balsamic tomatoes. Drizzle any of the remaining balsamic mixture over the top of the tomatoes. Close the sandwich and serve.
To take this sandwich on the go wrap it well in aluminum foil. For protein add some sliced grilled chicken.
15 minutes.
This is a great picnic sandwich because it doesn’t contain any mayonnaise and can be served chilled or at room temperature. The balsamic vinegar really makes it!
