for about 2 large bone-in chicken breasts or 4 boneless skinless chicken breasts
2 | medium mangos, peeled and cubed |
4 | garlic cloves, peeled |
1 | teaspoon chili powder |
½ | cup spicy ketchup |
1 | pinch crushed red pepper flakes if using non-spicy ketchup |
1 | teaspoon kosher salt |
1. Blitz all of the above ingredients in a blender. Use half of the sauce to marinate the chicken in a baking dish. Reserve the rest to brush on while grilling!
If you don’t have mangoes, peaches or apricots would work well. If you prefer a sweeter sauce add 1 to 2 teaspoons of sugar to taste.
5 minutes for the sauce!
This was a huge hit with all of us. The sweetness was natural and not too cloying, and there was a nice spicy kick in each bite.
