2 | bone-in split chicken breasts |
4 | ounces (half a log) plain goat cheese |
½ | cup dried cranberries |
½ | cup olive oil |
1 | teaspoon kosher salt |
½ | teaspoon cracked pepper |
1. Preheat the oven to 375F.
2. In a small bowl mix together the goat cheese and ¼ cup of the cranberries. Pull back the skin on the top of each chicken breast and stuff the cheese underneath it. Then place the chicken breasts in a baking sheet and drizzle the olive oil over the top of each chicken breast, making sure it is fully coated in the oil. Sprinkle the tops with the salt and pepper. Scatter the remaining ¼ of cranberries on top and around the sides of the chicken.
3. Bake the chicken for about 30 minutes, or until completely cooked through. Serve!
Serve this chicken with an absorbent starch on the side, like couscous, rice or potatoes. You don’t want to miss a second of the chickeny juices!
