Sundried Tomato, Olive & Parmesan Bruschetta

1 loaf french bread, sliced in ½-inch pieces
1 large garlic clove, cut in half
4 ounces shredded Parmesan cheese
8 ounces sundried tomatoes, finely chopped
8 ounces sliced green olives
1 tablespoon olive oil

1. Preheat the oven to 400 degrees F. Arrange the bread slices on a baking sheet and toast for 15 minutes, or until golden brown.

2. Meanwhile, mix the cheese, tomatoes, and olives together in a large bowl with a fork so they are completely combined.

2. Remove the hot bread from the oven and immediately rub it with the fresh cut side of the garlic clove. Then spread it a little bit of the olive tomato mixture on top. Drizzle with a little olive oil if needed, and serve!
