Uncle Will’s Rockin’ Spicy Chorizo Breakfast Wraps

Note: This is a little more of a method than a precise recipe so feel free to tweak amounts depending on your personal taste.

This method serves 4

Ingredients

2 spicy chorizo sausages, crumbled
6 slices of bacon, chopped into 1-inch slices
1 cup-ish, about one decent sized handful, frozen hashbrowns
4 eggs
1 pinch ancho chili powder
1 pinch garlic salt
4 warm flour tortillas
½ cup shredded Mexican cheese

Instructions

1. Place a non-stick skillet over medium-low heat and add the chorizo and bacon. Allow it to cook completely, gently stirring it as needed to make sure everything cooks evenly.

2. Meanwhile, whisk together the eggs, chili powder, and garlic salt in a bowl.

3. When the bacon and sausage are nearly cooked (after about 5 minutes or so depending on your stove), pour off some of the grease, then add the frozen hashbrowns straight from the freezer bag. No need to thaw at all. (SO efficient). Allow the meat to finished cooking and the hashbrowns should cook through and get just browned and crispy.

4. Pour in the eggs and allow them to scramble until just cooked through – about one minute, or maybe a little more. Do not overcook the eggs!

5. Divide the mixture amongst the four tortillas and then sprinkle each tortilla with even amounts of the cheese. Wrap it up like a burrito and serve!

Needless to say this spicy concoction was right up my alley. If you want more heat try adding a few hits of hot sauce when you whisk together the eggs. Any kind of baby spinach or avocado slices would be delicious too.
