Easy Shrimp Mango & Avocado Cups


1 dozen pre-baked phyllo cups
1 dozen cooked shrimp, cut into small pieces (about ½-inch)
1 mango, cut into small pieces (about ½-inch)
1 medium avocado, cut into small pieces (about ½-inch)
2 tablespoons low-fat sour cream
2 teaspoons fresh lemon juice
1 pinch kosher salt and pinch black pepper


1. Combine the mango, shrimp, and avocado pieces in a mixing bowl. Try to make sure they are cut into uniform sized pieces.

2. In a second bowl whisk together the sour cream, lemon juice, salt, and pepper. Fold this mixture into the shrimp mixture in the bowl. Use a teaspoon to scoop heaping amounts of the mixture into each phyllo cup. Serve!
