Classic Popovers

Ingredients

2 tablespoons unsalted butter, melted and slightly cooled
1 ½ cups unbleached all-purpose flour
1 teaspoon kosher salt
3 large eggs
1 ½ cups 2% milk

Instructions

1. Preheat the oven to 425 degrees F. Spray a 6-cup popover pan and set aside.

2. Whisk together the butter, flour, salt, eggs, and milk in a mixing bowl until completely smooth.

3. Place the popover pan in the oven for 2 minutes to preheat. Then remove it and divide the batter amongst all six cups. This will make 6 towering popovers. If you want smaller popovers fill each popover cup only half full and use the pan twice to make 12 popovers.

4. Bake the popovers for 30 minutes, or until the tops are burnished golden brown. Do not open the oven while they are baking!
