Simple Coconut Pineapple Ginger Smoothie

Ingredients

1 cup fresh pineapple chunks
1 cup coconut milk
1 teaspoon finely chopped ginger
1 cup ice cubes

Instructions

1. Place the first three ingredients in a blender and blend until smooth.

2. Then, add in the ice cubes and blend on high speed until completely smooth. Or, as I like it, leave the ice somewhat chunky. Serve with a straw!

This simple smoothie packs a punch flavor-wise. To change up the flavor try adding fresh herbs like basil or mint. Mango or strawberries will also work well in lieu of pineapple.
