Filling:
4 | pounds medium apples, Fiji or Cortland preferred, peeled, halved and cored and cut into thin slices |
4 | tablespoons fresh lemon juice |
1 | tablespoon ground cinnamon |
1/3 | cup chopped crystallized ginger |
1/3 | cup caramel sauce, divided |
Topping:
2 ½ | cups old-fashioned oats |
1 ½ | cups light brown sugar |
1 ¼ | cups all-purpose flour |
2 | sticks unsalted butter, cut into small pieces |
1. Preheat oven to 375F. Butter a 13 x 9 baking dish.
2. In a large bowl toss the apple slices, lemon juice, cinnamon, ginger, caramel sauce and ¼ cup light brown sugar. Spread the filling in the bottom of the pan so that it is evenly distributed.
3. In a second large bowl mix the oats, remaining sugar and flour. Pinch the butter in with your fingers until large pebbles form. Crumble this topping evenly over the apple filling and bake for about 55 minutes or until the filling is bubbly and the topping lightly toasted.
4. Allow the crumbled to cool completely before drizzling with the remaining caramel sauce and serving.
Ice Cream – especially vanilla, ginger or cinnamon – is the best when served with warm apple crumble!
