White Chocolate Bark with Fruit & Granola

Ingredients

4 bars (16 ounces) white chocolate, finely chopped
¾ cup granola with dried fruit (preferably dried cherries or dried cranberries) OR ½ cup plain granola with ¼ cup chopped dried fruit
¼ cup sliced almonds, lightly toasted

Instructions

1. Line a half baking sheet with aluminum foil and set aside.

2. Place the chocolate in a glass bowl and heat in the microwave in 20-second increments, stirring after each heating. Once it is a smooth stop microwaving.

3. Spread the cooled chocolate on the lined baking sheet in an 8 x 10 rectangle – or about that size.  Sprinkle the top evenly with the granola and the toasted almonds.

4. Slide the baking sheet into the refrigerator so it lays flat for at least 1 hour. Test with your finger after an hour of chilling. Once it is completely solid to the touch break it into desired sized pieces and serve.

This awesome bark is delicious when made so many ways. In lieu of granola try adding more chopped toasted nuts and dried fruit. Hazelnuts and a drizzle of melted Nutella on top would be excellent too!
