4 | Coconut Crusted Tilapia fillets from Sea Cuisine |
2 | cups jasmine rice |
2 | cups water |
1 | 15-ounce can coconut milk |
½ | teaspoon kosher salt |
½ | cup finely chopped baby spinach |
1. Preheat the oven to 375 degrees F. Place the fish in a lightly oiled baking dish and bake for 30 minutes
2. Meanwhile, bring the rice, water, coconut milk, and salt to a boil over medium heat. Boil for 1 minute, then stir well and reduce the heat to low and allow the rice to simmer for 20 minutes. Stir the rice occasionally so that it doesn’t get stuck to the bottom of the pan.
3. About 5 minutes before the rice cooking has come to an end drop in the baby spinach and allow it to wilt into the rice and heat through.
4. Divide the rice equally amongst four plates and serve the fish on top with a wedge of lime. Enjoy!
This delicious dish is a healthy weeknight meal. For heat consider adding some red pepper flakes or chopped jalapeno (de-seeded) to the rice!
