Local Food Travel: The FryBorg Food Truck
I am a little sad that my year of exploring food trucks is almost over. I’ve discovered so many good ones in our area! During my exploration I’ve been trying all kinds of cuisines served from a variety of vehicles. There are some that serve up full meals like a restaurant, others that focus specifically on one dish, and still more that are exclusively for desserts (!) This month I found the Fryborg Food truck, a truck that really pulls off a neat trick. The chef takes ordinary french fries and elevate them to the extraordinary. What was once a side dish to a cheeseburger or sandwich, becomes a main course with all kinds of ingredients and variations.
This awesome truck travels around Southern Connecticut and, I am going to assume, feeds a lot of hungry college students into the wee hours of the morning. They serve up french fries with the most incredible array of ketchups and dipping sauces. My two favorite were the pesto mayo and strawberry jalapeno ketchup. The fries themselves are crispy on the outside and soft on the inside with the perfect amount of salt on the exterior.
After sampling the regular fries, which just about blew my mind, we dove into the main courses. The brisket fries were topped with fresh pulled brisket and a dollop of sauce. The German fries, my personal favorites, were topped with a fried egg, bacon, and a mustard vinaigrette. They were seriously awesome.
While I didn’t think that a simple french fry truck could really open my eyes this one certainly did. I didn’t get a chance to try their fresh sodas, but I imagine they pair beautifully with the salty fries. I am curious about those sodas, however, which gives me the perfect excuse to head back the truck the very next chance I get.
