A Delicious & Easy Summer Snack with Triscuit

I am a big fan of no-cook food in the summer months. I like things I can make without going anywhere near the hot oven. Most of the time this means throwing together cold salads, easy sandwiches, and eating lots of fresh fruits. Another one of my favorite things is topping crackers with delicious bites like bits of cheese, nuts, pestos, and other healthy food. Last month I saw these delectable honey-topped peach Triscuits on Savannah Bee Company. I loved the idea of a salty wheat cracker topped with sweet fruit and honey, and nuts for an added crunch. I couldn’t wait to make my own variation.

Since I love the taste of honey and cheese together I went right for the Camembert I had on hand. (I would’ve loved to have used peaches, but I haven’t found any good ones in the northeast yet!) First I placed some fresh basil from my flourishing plant on the cracker, then I layered on cheese, honey, and some sliced almonds for that desired crunch. As I’d hoped, this simple topping transformed my favorite everyday snack cracker into a sweet summer treat. Two crackers was the perfect serving size to satisfy all my cravings and fill me up until dinner. I loved this combination so much I made a note to make a whole platter full for our next summer soirée.
