Mini Meatballs Subs
We are knee deep in holiday madness and I am all about keeping it simple in the kitchen. I am mining the freezer for soups and casseroles and doubling up on all of our favorites. When I assemble one lasagna I often go ahead and make two! One for now, one for later.
Last week my children requested meatballs so I went to grab the stash I usually keep on the top shelf of the fridge only to find that they were gone. Ugh. Since I had a little time before dinner I went out to the store and picked up this bag of Johnsonville Three Cheese Meatballs. They looked delish and are already pre-cooked so all I had to do was heat and eat.
The kids were totally fine with the new meatball in town and requested that we have meatball sandwiches instead of spaghetti. To make them perfect for little mouths I toasted sandwich bread, sliced up the meatballs, and made bite-size meatballs “subs.” I am using quotes here because they are nothing at all like submarine sandwiches, but the kids love to say it anyway.
These delightful dinner bites were absolutely perfect for our quick weeknight dinner. They meatballs were a snap to prepare and were totally delicious, and the kids were thrilled by the fresh take on their favorite meatball dinner.
