How to Cook Artichokes in a Pressure Cooker + Giveaway
Last month I received my first pressure cooker and it has been a revelation. I am able to cook everything I want, except now in half the time. No joke! I plan to share more and more about it as I continue my experiments, but today I want to share my favorite thing to cook in it: artichokes. As you know, I have a longstanding love for artichokes. This comes from my mother who cooked them nightly when they were in season. I try to do the same, the problem is time. They take so long to cook! But not anymore…
Cooking artichokes as been one of my biggest revelations with the slow-cooker. I trim them up, pop them in, and they are cooked perfectly in less than 20 minutes. It takes at least twice that long on the stove-top. When I lift they lid they are perfectly steamed and go straight the table with little bowls of lemon butter for dipping, and a bowl for discarded leaves. It is as simple as that.
This summer I plan to continue my pressure cooker experiments by making things like roast chicken, braised pork, and baked potatoes. I also heard that I can use it to make dulce de leche with a can of sweetened condensed milk (!)

Ingredients
- 2 large artichokes
- 1 teaspoon salt
Instructions
- Rinse the artichokes thoroughly. Cut off the stem at the base and use a sharp knife to cut off the top 2 inches of the artichokes. Snip off the pointy tops of the leaves and discard.
- Place the artichokes in the pressure cooker and add enough water so that the artichokes are halfway submerged. Add the salt into the water.
- Secure the lid on the pressure cooker and bring the full pressure on the highest heat setting. Then reduce the heat to medium-low and cook for 10 minutes. Release the pressure according to machine directions and remove the artichokes with tongs. Allow them to drain slightly on a plate lined with a paper towel. Then serve with your favorite dipping sauce.

I have never tried artichokes in a pressure cooker. Sounds easy enough, thank you. Pulled port couldn’t be easier. Cube up a pork shoulder and use dr. Pepper as your liquid and a full onion. After an hour drain it and it will fall apart. Just add bbq sauce and dinner couldn’t be easier.
I never thought about cooking artichokes in a pressure cooker. Brilliant idea! I would use it to make beans from scratch for myself and pork or chicken for my husband.
