Cottage Cheese Pancakes with Blood Orange Syrup {Webisode #59}

Last week I was trolling my mother’s recipe box for new ideas and pulled out this recipe for pancakes. She smiled broadly when I asked her about it which I took as a sign to prepare myself for warm family stories about how my grandmother used to make them for her and her siblings growing up. But, instead, she told me how she used to make the pancake batter when she visited my elderly grandmother, Harriet, once a week, and how Harriet would use the batter to make herself three pancakes each morning all week long. My mother would repeat this batter-making process at her visit the following week, and so on, enabling Harriet to make fresh pancakes for herself for years on end. In short, these weren’t the food of my mother’s childhood, they were the food of my grandmother’s widowhood.
I kind of liked that story, too. My mother, in her own way, was being a naptime chef for Harriet. Preparing the batter ahead of time and leaving it in the fridge for my grandmother to make all week. Mom particularly liked all the eggs and the addition of cottage cheese in the recipe since it was good way for Harriet to fit extra calcium into her diet. We don’t know where the recipe came from, most likely from a magazine clipping like many of my grandmother’s favorites were!
On Saturday morning I decided to reminisce about Grandma Harriet and make these for my own family for a little power brunch. Whipping everything together in the blender took no time at all, then I poured them into the skillet and turned out stack after stack. The pancakes were gorgeous and delicious to eat. I loved the way they puffed up as they cooked, they were rich and creamy from the cheese with a nice rise from the eggs. To add a sweet twist I drizzled them with Blood Orange Syrup, a gift from my Mom. I loved the contrast of the citrus with the vanilla pancakes, it gave them a bright tropical flair that was uplifting on a winter morning. As we ate them I smiled and thought about my grandmother and how happy she would be that my daughter is enjoying one of her beloved recipes.
Recipe
Grandma’s Cottage Cheese Pancakes with Blood Orange Syrup
Ingredients
1 | cup cottage cheese |
6 | eggs |
½ | cup all-purpose flour |
¼ | teaspoon salt |
¼ | cup oil |
¼ | cup milk |
½ | teaspoon vanilla extract |
Instructions
1. Place all of the ingredients in a blender and blend for exactly 1 minute. Heat butter in a skillet until it begins to bubble then pour in some batter to desired pancake size. Cook until the pancakes are golden brown on one side. Then flip and cook on the other side. Repeat with remaining batter.

I served this with blood orange syrup. To make your own blood orange simple syrup combine 1 cup water, 1 cup sugar and the juice and zest of one blood orange in a small saucepan over medium heat. Warm without stirring until the sugar is dissolved. Remove from heat and cool.

Yum! I made these this morning for my boy and I and they were a hit! I didn’t have any blood oranges so we made due with maple syrup but I think next time I see some in the store, I’ll grab them to try with these pancakes. Very good!
