Oatmeal Heath Bar Cookies
This winter my friends and I have been taking meals to my friend Melissa’s family while she undergoes chemotherapy. Her prognosis is excellent, but the treatments can leave her tired and lethargic. It is the least we can do to drop off a healthy meal now and then so she can concentrate on recuperating. Last week was my turn to bring her dinner and given my current state I ended up taking her a mash-up of homemade foods, like a big batch of these oatmeal heath bar cookies, and a few store-bought items. Together everything comprised enough food for a few healthy family meals with some comforting nibbles thrown in.
What was great about these cookies is that they were a cinch to pull together in under an hour. This is key for my current cooking stamina. I ended up basing the recipe on the classic oatmeal raisin cookie found on the top of the Quaker Oats box. To give it a fresh twist for Melissa I added an extra dose of vanilla, omitted the cinnamon, and tossed in some chocolate covered Heath Bar bits. Like the classic recipe the cookies came out soft and chewy and perfectly comforting.
Recipe
Oatmeal Heath Bar Cookies
adapted from the Quaker Oats Box
makes about 3 dozen small drop cookies
Ingredients
1 | stick plus 6 tablespoons butter, softened |
¾ | cup firmly packed light brown sugar |
½ | cup granulated sugar |
2 | large eggs |
2 | teaspoons vanilla extract |
1 ½ | cups all-purpose flour |
1 | teaspoon baking soda |
2 | teaspoons kosher salt |
3 | cups quick-cooking oats |
1 | cup chocolate covered Heath Bar bits |
Instructions
1. Preheat the oven to 350 degrees F. Mix the flour, baking soda, and 1 teaspoon of the salt in a small bowl and set aside.
2. In an electric mixer beat the butter and sugars on medium speed until light and fluffy. With the mixer on low add the eggs one at a time, beating well after each addition. Then add the vanilla and mix well.
3. With the mixer on low slowly add in the flour mixture until just combined. Then stir in the Heath Bar bits.
4. Line two baking sheets with parchment paper and drop the dough by the rounded tablespoonful about 2 inches apart onto each sheet. Once the entire sheet is filled sprinkle a little pinch of kosher salt over all the cookies.
5. Bake for about 8 to 10 minutes, or until the cookies are lightly browned and set in the middle. Cool on the cookie sheet for five minutes, then remove to wire racks to cool completely.
