Beer Battered Cod with Sweet Potato Chips for Sea Cuisine
When Sea Cuisine sent me their Beer Battered Cod as a part of our seven week Seafood Cook-a-Long I jumped for joy! Who doesn’t love the chance to enjoy a little fish and chips now and then?!! The good news is that making fish-n-chips at home is generally much healthier than the greasy fish in a newspaper bag you buy curbside in Scotland. To give our Friday night cod a traditional British feel, yet with a healthy twist, I decided to skip the deep fryer and make spicy baked sweet potato chips to go alongside instead.
In keeping with the theme that weeknight seafood dinners can be a snap with Sea Cuisine I simply baked the fish according to directions. No other preparation was necessary! While the fish was cooking I made our sweet potato fries. I’ve always loved baked french fries (much healthier than gorging on my favorites from Five Guys!) and making them with sweet potatoes was a cinch. To give them a little kick I added a pinch of cayenne pepper and dash of salt. Just enough to elevate them from ordinary to awesome. As far as Friday night fish dinners for Lent go this was one of our favorites!

Beer Battered Cod with Sweet Potato Chips
Ingredients
2 | fillets Sea Cuisine Beer Batter Cod |
4 | sweet potatoes, scrubbed and patted dry, cut into 10 even-sized wedges |
¼ | cup olive oil |
1 | pinch kosher salt |
½ | teaspoon cayenne pepper |
Instructions
1. Preheat the oven to 375 degrees F. Place the cod in a lightly oiled baking dish and cook for 30 minutes, or until iightly browned.
2. For the Fries: Preheat the oven to 425 degrees F and line a baking sheet with aluminum foil. Brush the foil with half of the olive oil and arrange the potato slices on top of it so that none are overlapping. Then sprinkle the tops with the salt and cayenne pepper and the remaining olive oil. Bake the fries for about 20 minutes, then open the oven door and quickly remove the baking sheet. Use a spatula to carefully flip the fries to the other side and return to the oven for another 20 minutes. Once they are crispy and lightly browned all around place the fries on a plate lined with a paper towel. Sprinkle with additional salt if desired and serve!
