Today I need to tell you about the amazing Bacon & Green Chili Quiche from the shower I wrote about yesterday. All the food was great, but this was a real standout. We loved the perfect soft cheesy texture studded with the finely chopped chilis and crispy bacon. It was the perfect balance of spicy, sweet and salty. The combination of ingredients was welcome deviation from more common ham and cheese quiches.
Believe it or not, I’ve actually have already made this recipe since the shower. Last week I baked it to take to my daughter’s Teacher Appreciation Luncheon. I baked it the day before while my daughter was napping and kept it chilled until the next day. Then I took it to the event hall for the buffet and we reheated it in the school kitchen. We didn’t stay for the luncheon, it was meant for the teachers to enjoy on their lunch hour, but I heard rave reviews the next day. They loved the spicy sweet flavors and sharp cheesy flavor. It just goes to show you can make this quiche for just about everyone!
Recipe
Bacon & Green Chili Quiche
adapted from Bon Appetit 1996
Ingredients
8 | strips bacon, cooked and roughly chopped |
1 | (4-ounce) can green chilis, drained and finely chopped |
4 | scallions, chopped |
1 ½ | cups shredded sharp cheddar cheese |
½ | cup shredded Monterey Jack |
1 ¼ | cups half and half |
4 | eggs |
1 | large pinch kosher salt |
½ | teaspoon freshly cracked black pepper |
1 | teaspoon finely chopped chives |
1 | pie crust |
Instructions
1. Preheat oven to 425ºF. Prepare the pie crust according to directions and bake it for 5 minutes,
2. Reduce the oven temperature to 400ºF.
3. Sprinkle the bacon, chilies and scallions over the bottom of the crust. In a large bowl combine the cheese and sprinkle that evenly on top of the bacon mixture.
4. In a large bowl beat the half and half, eggs, salt and pepper until fully blended. Pour it over the cheeses. Scatter the chopped chives on top.
5. Bake the quiche for about 45 minutes or until the top is set and a knife inserted comes out clean. Let the quiche sit for about 10 minutes. Cut into wedges and serve.
