Lemon Cream Cheese Pancakes with Blueberry Maple Syrup {Naptime Entertaining}
Last weekend we decided to have a breakfast party. Since my daughter and I will be on the Vineyard for book events this week we wanted to have one last nice breakfast together before not seeing Dad for a whole seven days. Morning entertaining, even for just your family, can be kind of tricky. How early do you get up to cook (especially if you value sleeping in like me)? How fancy do you get? My answer was not to get up too early or get too fancy, instead focusing on a fresh, fun breakfast of lemon cream cheese pancakes with blueberry maple syrup.
They were the perfect summer breakfast full of bright tangy lemon flavor, pockets of soft cream cheese, and a healthy dose of fresh blueberry maple syrup. They were also a snap to pull together because I was able to use to use the awesome homemade pancake mix I keep on hand at all times.
When we woke up – at a very normal hour since these don’t take too much time – I whipped up this fresh pancake mix and stirred in the cream cheese. While they cooked on the skillet I heated up a fresh pan of blueberry maple syrup which is so easy it is barely a recipe. I make it all the time and serve it with all sorts of things like french toast, popovers, and scones. It is so neat how the berries slowly burst and their flavor seeps into the maple syrup turning it dark blue to match the taste. On the side I served bacon, fresh orange juice, and a tea (for me). It was the perfect breakfast party to kick off our trip and bid dad farewell, until Friday!

Lemon Cream Cheese Pancakes with Blueberry Maple Syrup
Ingredients
1 | batch fresh pancakes made from homemade pancake mix |
1 | teaspoon freshly grated lemon zest |
4 | tablespoons cream cheese, softened |
1 | cup maple syrup |
1 ½ | cups fresh blueberries |
Instructions
1. Whip up one batch of the pancakes with the homemade pancake mix. Then whisk in the cream cheese until it is in very small pieces. Stir in the lemon zest.
2. Melt a pat of butter in a skillet over medium heat and cook the pancakes until lightly browned on both sides.
3. To make the sauce add the blueberries and maple syrup to a small saucepan and warm over medium heat. Warm the berries, swirling the pan as necessary, until the berries soften and burst. About 10 minutes.
4. Stack up the pancakes and pour the sauce over!
