Local Travel: Skinny Pines Pizza Truck
One of my favorite things about my year as a flavor correspondent for Sargento is discovering all of the amazing food trucks springing up within ten miles of my house. Turns out Southern Connecticut is a hot bed of food truck entrepreneurs. I LOVE it! To please my daughter, last week we decided to visit a truck popular with both adults and Kindergarten set – Skinny Pines Pizza. It was a Friday night and we were in the mood for an easy dinner that everyone would love.
The cool part about Skinny Pines Pizza is that it is an actual wood burning pizza oven on a trailer that is towed behind a large van. Wherever they go they pitch a tent in front of the oven, open a cooler full of fresh ingredients, and stand at the ready to take orders. When I see them at the farmer’s market they always have a “market pizza” on the menu featuring ingredients from the farmer’s selling that day. On this particular evening they were at a local brewery and featured a few pizzas that would pair particularly well with beer.
Since the pizza is made to order you might worry it would take a while but it really didn’t. We order two cheese pizzas, one pepperoni, and one meatball. They were expertly cooked to a crisp in the oven and served up piping hot. I particularly liked the sauce. It was rich and tomatoey without being overly sweet like some sauces I’ve tasted. We all enjoyed our pies for dinner. My daughter even ate two! As far as food trucks go she declared this her favorite so far. We will see how it holds up the grilled cheese truck next week!
