Marbled Blondies for April Fools
It can be fun to play jokes with food if you are super clever. But I am not one of those people so I just give something a little twist and call it my own personal April Fools joke. For example, are these blondies or are they brownies? Or are they both? I called them marbled blondies because that is the easiest thing to say.
The little trick to these beauties is that the chocolate chips are melted and swirled into the batter instead of just stirred in like a cookie. The result is that each bite is different. Sometimes you get a rich butterscotch mouthful and other times you get a decadent chocolate treat. Sometimes you get both! Ultimately you really can’t go wrong. The flavor is amazing no matter which way you cut it!
Ingredients
- 1 cup unsalted butter, melted
- 2 cups light brown sugar, firmly packed
- 2 cups all-purpose flour
- ¾ teaspoon baking soda
- 2 large eggs
- 1 tablespoon vanilla extract
- 1 teaspoon Kosher salt
- 12 ounces semisweet chocolate chips
Instructions
- Preheat oven to 325ºF. Butter a 9×13 baking dish and set aside.
- In a double boiler, or glass bowl placed over simmering water, and add the butter and sugar. Allow to melt slowly and whisk until completely blended. Remove from heat and allow to cool.
- While butter mixture is cooling, whisk together flour and baking soda in a small bowl or measuring cup. When the butter mixture has cooled whisk in the eggs, vanilla, corn syrup and salt. Fold in the flour mixture with a wooden spoon until completely combined.
- Pour the batter into the prepared pan and sprinkle the chocolate chips evenly on top Bake the blondies for 5 minutes so the chips begin to melt. Then carefully remove the pan from the oven. Use a knife to swirl the chocolate into the batter in a decorative pattern. Return the pan to the oven and bake it for 35 to 40 minutes, or until cake tester comes out clean and edges of the blondies are slightly pulled away from the sides of the pan. Cool completely, then cut into bars and serve.
