Chocolate Guinness Loaf
I am not Irish, but I never shy away from a good chocolate quick bread recipe and this seemed like a good day to share one made with a strong Irish beer. I assure you, this is also family-friendly. The alcohol from the Guinness burns off while baking so don’t worry, the kids can eat it too. We made this on Sunday while my son napped. It was a quick one-bowl affair that came together quickly and tasted amazing. It even has made an appearance in the lunchbox this week! I hope you enjoy eating it as much as we do. Ingredients
- 2 sticks unsalted butter, melted and cooled slightly
- 1 ½ cups packed light brown sugar
- 2 large eggs
- 1 teaspoon pure vanilla extract
- ½ cup cocoa powder
- 1 teaspoon kosher salt
- 1 ½ cups unbleached all-purpose flour
- 1 teaspoon baking soda
- 1 cup Guinness
- 1 cup semisweet chocolate chips
Instructions
- Heat an oven to 350 degrees F. Butter the inside bottom and sides of a 9x5 loaf pan.
- In a large bowl beat the butter and sugar until smooth. Then beat in the eggs, and vanilla extract.
- In a small bowl mix the cocoa powder, flour, baking soda, and salt. Add the flour and the Guinness in two batches, stirring well after each addition. Stir the batter until it is just smooth, toss the chocolate chips with 1 teaspoon of flour and stir them into the batter.
- Spread the batter into the prepared pan and flatten the top with a spatula. Place the loaf pan a baking sheet and bake for 55 minutes to 1 hour, or until a cake tester inserted into the center comes out clean.
- After baking allow the cake to cool for 10 minutes in the pan, then carefully invert onto the wire rack to cool completely. The cake is dense and fragile so be careful when handling it. Allow it to cool completely before cutting and serving.
Hi, This looks so good. Do you have any idea how much in weight the choc chips might be? I would probably use a bar of chocolate and chop it?
Hi! I’d say about 6 to 8 ounces of chopped chocolate. There is no harm in going with 8 – nobody complains about extra chips. 🙂
