Whole Wheat Cranberry Spice Oat Muffins & Martha Stewart Casserole Dish Giveaway {Powernap}
This is the latest installment of my Powernap column. The series where I share quick, easy food that can be made for all kinds of situations. Powernaps are short and sweet, and so are these recipes. These are the things I make in a jiffy when I need a quick snack, am in the mood for a recipe experiment, or simply need to clean out the pantry.
Last week I bought my first fresh cranberries of the season. They were floating loose in a container of water at the grocery store and I quickly scooped up a a few cupfuls to bring home. Though I often make cranberry sauce and cranberry cakes this time of year, this time I wanted to make something sweet that my daughter would love, but with a healthier slant, so I turned to these muffins. Today I am excited to be sharing the recipe with the Macy’s mBlog and they have generously donated a gorgeous Red Martha’s Stewart Ceramic Covered Casserole Dish for me to giveaway to one lucky person!
To give the muffins a nutty taste with an element of health I used half white and half whole wheat flour. Then I used a touch of maple syrup to give them a natural sweetness. I stirred in the cranberries and topped the muffins with a tasty, not-too-sweet oatmeal streusel before popping them in the oven. The muffins were out of the oven and cooled before my daughter was home from cool so she could enjoy them as a snack. They were perfectly sweet and full of ripe red berries, the ideal healthier fall muffin for us all to enjoy.

Recipe
Whole Wheat Cranberry Spice Oat Muffins
Ingredients
½ | cup vegetable oil |
½ | cup plus 2 tablespoons real maple syrup |
½ | cup plus 2 tablespoons whole milk |
1 | cup white flour |
1 | cup whole wheat flour |
2 ¼ | teaspoons baking powder |
½ | teaspoon baking soda |
1 | pinch kosher salt |
2 | teaspoons ground cinnamon |
1 | cup cranberries |
Topping:
¼ | cup all-purpose flour |
¼ | cup whole wheat flour |
¼ | cup rolled oats (not quick-cooking) |
¼ | cup dark brown sugar |
2 | teaspoons ground cinnamon |
1 | pinch salt |
2 | tablespoons vegetable oil |
1 | tablespoon whole milk |
Instructions
1. Preheat the oven to 350F. Line a 12 cup muffin tin and set aside.
2. In a large bowl, whisk together the oil, syrup and milk in a large bowl. Then sift in the dry ingredients and fold the batter together. Stir in the cranberries and fill each muffin tin about ¾ full.
3. For the topping, mix the dry ingredients together in a bowl, then add the vegetable oil and milk and pinch everything together with your fingers until pebbles form. Drop the topping evenly on the muffins.
4. Bake for 25-30 minutes, or until a cake tester comes out clean.

I love healthy treats that still taste like a dessert… these muffins look wonderful! My favourite fall breakfast treat has to be pancakes! We don’t make them very often, but it’s a wonderful way to start any weekend morning!

My favorite is French Toast. I know it’s good any time of the year, but in the fall when it’s starting to get chilli it is so nice to cozy up to a yummy plate of cinnamony french toast.

There’s a local cafe that has the most incredible breakfasts, and one of my favorite seasonal menu items is the gingerbread pancakes. It’s absolute heaven and such a treat! (The pumpkin pancakes aren’t too far behind, either.)

I love french toast, with vanilla, cinnamon, and a dash of sugar/sugar sub; bread soaked in egg that has a little water to lighten them. Delicious. Sprinkle a touch of apple pie or pumpkin pie spices on top. Delicious. Love reading your posts; keep them coming.

I always enjoy “Egg in a Basket”; add a slice of bacon and this is a satisfying breakfast.
I am not really a fan of pumpkin but I do enjoy pumpkin oatmeal with apples and cranberries. I am sure enjoying these recipes on here.
I’ve gotten to really enjoy oatmeal in the morning – especially if it contains cinnamon, dried blueberries, and maybe some toasted almond slivers.
