Roqeufort Pear Honey Tart & Ile de France Giveaway {Naptime Entertaining}
The Occasion: Winter entertaining recipe testing with new Roquefort to prepare for party later this month.
Attendees: Party of 3.
Naptime Goals: Make new Roquefort Pear Honey Tart.
Tonight’s Menu: Reheat the rest of the Mushroom Leek Soup (recipe to come soon!)
When I entertain there are usually at least two kinds of cheese dishes on our table. I typically make up one basic cheese plate, hot cheese dip, or baked brie for a savory pre-dinner nibble, and feature cheese somewhere in the dinner course. This may seem like overkill, but it actually works out well. There are so many varieties of cheese it is fairly easy to use it several times in one evening without overdoing it. Also, tasty cheese does not have to be expensive, so drawing up a cheese-focused menu can be quite budget friendly. With a few dinner parties on the horizon I recently decided to focus on a few new entertaining recipes featuring cheese, starting with this terrifically strong, fresh Roquefort.
I got the idea for this tart from the basic tomato tart I make in the summer. I replaced the tomatoes with pear slices, added a crumbling of delicious Roquefort and topped it all with a very thin drizzle of good honey. For entertaining later this month I will cut the pastry into easy to handle triangles, and might even serve it in large slices alongside a simple green salad.
The Roquefort I used in this recipe was sent to me by the wonderful people at Ile de France. Their special brand of Roquefort blue cheese is made from the milk of grass-fed sheep and Penicillium Roqueforti that’s extracted from their very own homemade bread. I love nearly all kinds of blue cheeses and can honestly say that this cheese are particularly fresh tasty with distinct grassy flavor.
Luckily, the Ile de France team wants you to try their delicious Roquefort as well and are giving away five of their awesome cheese baskets to five lucky readers. It is time we all get in the cheesy entertaining spirit!

Recipe
Roquefort Pear Honey Tart
Ingredients
1 | sheet puff pastry, defrosted |
2 | small ripe pears, peeled and sliced thin |
2 | ounces Roquefort |
2 | teaspoons honey |
1 | pinch of sea salt |
Instructions
1. Preheat oven to 375ºF. Line a jelly roll pan with parchment paper or a Silpat. Place the puff pastry on the lined baking sheet and lightly score a ½″ border around the edge with a sharp knife. Use fork tines to prick the pastry inside the border all over. This will prevent the pastry from puffing up too much when baking.
2. Place the pear slices in a single layer on the puff pastry, being careful not to overlap. There might be a few left over depending on the size of the pairs you use. Break the Roquefort into small pieces and drop them around the pear slices. Drizzle the honey back and forth over the pear and cheese.
3. Baked for 30-40 minutes or until pastry is crispy and deeply browned. Sprinkle on the pinch of sea salt. Serve.

Aside from Mac n cheese and dip, my all time favorite cheese dish to make is tomato, basil and cheese grilled sandwiches. I use a cast iron skillet with plenty of butter and switch my cheese depending on the weather and mood I’m in.
