Last Gasp Classic Popovers

Classic Popovers

I don’t have many words of wisdom to share today. The lesson here is that it is always good to keep the preschooler occupied while waiting for a baby to arrive. And, if said preschooler wants to stay occupied with a baking project, make it easy on yourself and choose the simplest thing in your repertoire. Like popovers, for example.

We made these two days ago when my husband had a last minute business trip and my daughter and I had completed our rounds through every board game and puzzle in the toy closet. I placed all the ingredients on the kitchen table so I could sit while we worked and put my daughter in charge of whisking while I cracked the eggs. Then, into the oven they went until, voila, the gorgeous golden tops where glistening and puffy and ready to eat!

Classic Popovers

Ingredients

2 tablespoons unsalted butter, melted and slightly cooled
1 ½ cups unbleached all-purpose flour
1 teaspoon kosher salt
3 large eggs
1 ½ cups 2% milk

Instructions

1. Preheat the oven to 425 degrees F. Spray a 6-cup popover pan and set aside.

2. Whisk together the butter, flour, salt, eggs, and milk in a mixing bowl until completely smooth.

3. Place the popover pan in the oven for 2 minutes to preheat. Then remove it and divide the batter amongst all six cups. This will make 6 towering popovers. If you want smaller popovers fill each popover cup only half full and use the pan twice to make 12 popovers.

4. Bake the popovers for 30 minutes, or until the tops are burnished golden brown. Do not open the oven while they are baking!

We ate these hot from the oven and later my daughter had a second one for dessert sprinkled with cinnamon sugar!
