Fire Roasted Spicy Tomato Soup for Holiday Dinner {Powernap}

Last week I was sent a sample pack of delicious 2011 Reserve Organic Muir Glen tomatoes. I LOVE these tomatoes and use them for all sorts of things when they are in season. In this case I decided to test drive a few soup recipes to find a great option for our holiday meal. With all the great tomatoes at my fingertips I knew it would be hard to go wrong!
Soup is probably one of the best dishes to make in advance. With most soups the flavor only improve with time and they never, ever go bad sitting on the stovetop for an extra hour. I made this soup while my daughter was napping after a particularly exhausting day at school. Since the tomatoes contained so much flavor I didn’t need to add any unusual ingredients or spices. I simply browned some garlic and onions, then added the tomatoes and let everything simmer for nearly an hour. Before serving I pureed it with my hand blender to give it a smooth, silky texture. The green chilis in the fire roasted tomatoes gave it a gorgeous spicy kick that was more than enough heat for us. My husband and I both agreed this would be a great hot soup for winter nights when you really need to be warmed up. I might even serve it with a dollop of sour cream!

Recipe
Fire Roasted Spicy Tomato Soup
Ingredients
1 | tablespoon olive oil |
2 | cloves garlic, diced |
1 | medium yellow onion, chopped |
2 | cups vegetable stock |
1 | can Reserve Harvest Sunset Fire Roasted Diced Tomatoes (or any plain diced tomatoes) |
1 | can Muir Glen Organic Fire Roasted Diced Tomatoes with Green Chilies (see substitution ideas below) |
Instructions
1. In a large heavy bottomed pan warm the olive oil. Add the onions and cook until translucent, about 5 minutes. Then, add the garlic and cook until golden brown, about 1 minute.
2. Pour in vegetable stock and both cans of tomatoes and allow everything to simmer over medium-low for about 30 minutes, stirring now and then.
3. Before serving, puree the soup with a hand blender, or by scooping it into a countertop blender in batches. Return the soup to the pot and allow simmer for about 5 more minutes, then serve.

If you don’t have the tomatoes with chilies available simply use two cans of diced tomatoes and ½ can of chopped green chilis.
