Day 4: Easy Shrimp Mango & Avocado Cups & $50 Whole Foods Gift Card Giveaway! {Naptime Entertaining}
When it comes to entertaining this season a lot of you asked for some easy-peasy quick party recipes. I am, of course, very happy to oblige since you know I am all about delicious food made with minimal fuss. Today I’ve partnered with Whole Foods Market to share an excellent, and simple, seafood appetizer that is perfect for seasonal entertaining. Sure, this could be done with seafood from any market, but today I am specifically working with Whole Foods Market because of their commitment to sustainability. I simply love that Whole Foods Market features Wild-Caught Seafood Sustainability Ratings for each of their seafood products. And, better yet, they no longer carry red-rated (i.e. unsustainable) seafood in any of their stores as of Earth Day 2012. I’ll always root for a company that commits themselves so wholly to respecting the Earth and maintaining our food supply for generations to come.
When it comes to entertaining with seafood I always try to pick something that most people love like shrimp or crab. My husband and I also happen to love things like oysters on the half shell and a wide variety of fish, but when it comes to party food I think it is easy to stick with the tried and true. Guests always love a simple ceviche, lobster roll, hot crab dip, or tiny fish or crab cakes. Knowing this I’ll happily make those appetizers over and over – I want everyone to be pleased when they come over.
Since I had an unfortunate experience with shrimp cocktail when I was little that is the one seafood appetizer I have never ever wanted to make. Instead, when entertaining with shrimp, I turn to things like these easy shrimp cups. I was so pleased to discover that my friend Phoebe relies on something similar for guaranteed catering success! For my shrimp cups I buy frozen phyllo cups (much easier than making them), and mix shrimp, chopped mango, and avocado with a touch of citrus dressing and voila – the filling is made. This recipe makes the perfect amount for entertaining a crowd of eight to ten, and can easily be doubled to feed many more! I hope that you find these as popular as your next party as I do. When I made these the other night there weren’t any left by the end of the evening!

Recipe
Easy Shrimp Mango & Avocado Cups
Ingredients
1 | dozen pre-baked phyllo cups |
1 | dozen cooked shrimp, cut into small pieces (about ½-inch) |
1 | mango, cut into small pieces (about ½-inch) |
1 | medium avocado, cut into small pieces (about ½-inch) |
2 | tablespoons low-fat sour cream |
2 | teaspoons fresh lemon juice |
1 | pinch kosher salt and pinch black pepper |
Instructions
1. Combine the mango, shrimp, and avocado pieces in a mixing bowl. Try to make sure they are cut into uniform sized pieces.
2. In a second bowl whisk together the sour cream, lemon juice, salt, and pepper. Fold this mixture into the shrimp mixture in the bowl. Use a teaspoon to scoop heaping amounts of the mixture into each phyllo cup. Serve!

my fave seafood dish is often a pasta dish with shrimp 🙂 but nothing beats a fresh diver scallop!
I’ve never been to a party with this or served it myself, but I’d love smoked salmon on tiny buckwheat pancakes with chives!

I think going forward my fav will be the Shrimp Mango and Avocado cups (so easy & pretty) but up till now my fav seafood app is much loved but basic: the shrimp cocktail platter with cream cheese for dipping. I also love to bring my Deviled Eggs garnished with smoked or baked salmon and shrimp. Yum!
