Chocolate Avocado Chia Pudding

I’ve recently come around to breakfast puddings for several reasons, not the least of which is that they can be prepared the day before. Though I don’t mind cooking breakfast, there is really something so easy about having it ready the second I come downstairs! One of my favorite flavors of pudding is the chocolate avocado chia pudding. It takes just a few ingredients: grassfed milk, avocado, raw cocoa, and chia seeds, vanilla, and honey, and you are all set.

The other great thing about this pudding is that it is made in the blender. I add all of the ingredients and pureé them together. Then I pop the pudding in the fridge to set overnight! It couldn’t be easier.

I use real grass-fed milk when I make this pudding because I love the flavor and the texture. I also make sure it is grass fed milk because I know that comes from cows that are treated well and graze openly on GMO-free plants. Because of this their milk is naturally chock full of essential vitamins and fatty acids, only adding to the health of my pudding. It also is easier on the environment and for the health of the cows overall.

In fact, whenever I buy any dairy product I do my best to buy only those from grass fed foods because my family and I trust them, and it’s a more natural source of dairy for us. My kids have always been big milk drinkers so it makes sense that puddings and all similar variations are right up their alley. Chocolate Avocado Chia Pudding

1 large avocado

½ cup grass fed milk

2 teaspoons honey

½ teaspoon vanilla extract

2 tablespoons cocoa powder

2 tablespoons chia seeds

1) Add all of the ingredients to a blender and process until smooth. Pour the mixture into a large bowl and cover with plastic wrap. Place in the refrigerator until set. About 20 minutes.

2) Garnish with chopped nuts, coconut, or fresh berries. Enjoy!

    Wow this looks yum! I am going to try it for breakfast tomorrow. We’re usually pancake lovers in our house but you can’t beat an instant breakfast as soon as you get up! Seems a little less guilty too! 🙂
