Mediterranean Herbed Pork Roast & Staub 6.25 Quart Cocotte Giveaway {Naptime Entertaining}
This week I am talking about some holiday favorites. These are the favorite dishes we like to serve year after year at our holiday table and I think you might like them too. To add to the fun this week my friends at Big Kitchen.com are generously donating a gorgeous purple 6.25 quart Staub Cocotte. I swear, these cast iron dutch ovens are the best for roasts, soups and even no-knead bread. I especially love the little tips on the lid that are designed specifically for braising! Entry rules are below so be sure to leave your comment. In the mean time, let’s talk about one of the holiday favorites recipes I use this gorgeous Staub for: pork roast!
The beauty of this kind of roast is that it can so easily be thrown together in advance which is easy enough to do during naptime, or when you have a busy house of guests and not a lot of time to hover over the stovetop. When we made this the other day I put it together while my daughter was at school and slipped it in the oven toward the end of the day. I’ll probably do the same thing next week for Christmas – assemble it during naptime and cook it later. We loved how the pork was moist and aromatic after roasting all evening. It was the perfect easy dinner and will be great for a holiday meal!

Recipe
Mediterranean Herbed Pork Roast
Ingredients
3 to 4 | pound boneless pork roast |
1 | tablespoon oil |
1 | tablespoon kosher salt |
1 | tablespoon of freshly cracked pepper |
3 | garlic cloves, finely chopped |
1 | onion, roughly chopped |
1 | cup of water |
2 | sprigs fresh thyme |
2 | sprigs fresh oregano |
1 | sprig fresh rosemary |
Instructions
1. Preheat the oven to 350F. Rub all sides of the pork roast with the salt and pepper.
2. On the stovetop heat the olive oil in a heavy bottomed stockpot and sear the pork roast on each side for about four minutes, or until each one is golden brown.
3. Add in the garlic cloves and onion. Pour in the water, thyme and oregano and bring to a boil for a minute. Cover tightly and roast in the oven to 1 to 1 ½ hours.

FB fan, my favorite dish is a good savory dressing w. onion and sage. Sometimes I make it and add extra chicken meat so it’s a meal in itself.
We always make Perry’s Pudding – really basic ingredients baked together in a casserole dish – bread cubed and smothered in butter, tomato sauce, brown sugar. Baked in the oven till bubbly and crispy on the edges. This is so decadent and goes wonderfully with filet mignon.
It wouldn’t be the holidays without at least one Hannukkah brisket – my mom still makes the best I’ve ever tasted!
Spiced apples made with the red hot candies have always been one of my favorite holiday dishes! My grandmother made them every Christmas and now my dad does. Delicious!

My favorite holiday dish is actually an appetizer I learned from my mom: Caviar Pie. Using a spring form pan layer a softened cream cheese and sour cream base, with chopped onions, hardboiled eggs, and caviar, repeat two times. Serve with rye toast points! Yummy!

I think your pork roast might just be this year’s main course! And while I just buy it in a carton, we always have peppermint ice cream after dinner.
